26 seconds per avocado is slow compared to a trained employee at a properly setup work station
Employee training is CRITICAL for this task. Improperly cutting avocados is the is one of the top kitchen related reasons for Emergency Room visits in the USA. (This includes people in their homes)
So I expect Chipotle is looking at worker’s compensation claims as much as wage increases.
Source: I own a coffee house and we serve lots of avocado toast. We are very careful about how we train and handle avocados. The task is easy to make safe, but without training and oversight people strongly tend to do it in a dangerous way.
